This root veggie dish will make a beautiful and nourishing addition to your Thanksgiving table, and really, on any other night of the year! Follow this easy recipe (you really can’t mess it up!) for perfectly crisped and flavorFULL carrots. All you need is avocado oil and five spices! Be sure to double or triple the recipe depending on your head count. I used 12 small carrots, which after roasting, was enough for three to four people.
12 organic rainbow carrots
½ tsp turmeric
½ tsp oregano
½ tsp cumin
½ tsp coriander
¼ tsp cinnamon
What to Do:
Preheat oven to 400, and line a baking sheet with parchment paper.
Under your faucet, scrub carrots to clean and remove dirt (I prefer to scrub over peel); lay out to dry, and then cut into coins.
In a small bowl, mix together all spices.
Place carrot coins into a separate, medium-sized bowl. Drizzle or spray (depending on what’s in your pantry) enough avocado oil to lightly coat each carrot.
Sprinkle spice mix over carrots and toss to evenly coat.
Disperse carrots evenly onto baking sheet.
Bake at 400 for 30 minutes; let cool and place in your favorite dish! I love to serve these family style.
