Veggie burgers that even the non-vegetarian/vegan person will love! My dad is living proof! The steps to make these patties are simple, and all you have to do is form using your hands, bake for a minimal amount of time, and sear in a skillet. They even hold together when sandwiched in a bun! Enjoy :)
1 cup cooked sprouted rice, cooled (I love Trader Joe’s Organic Tri-Color Sprouted Rice)
1 1/2 cups raw walnuts
1 tsp cumin
1 tsp oregano
1 tsp chili powder
1/2 tsp (maybe more) paprika
1/4 tsp pink salt
1/2 yellow onion
1 tsp minced garlic
Avocado oil (I prefer spray)
1 cup pinto beans
3 Tbsp tomato paste
1 1/2 Tbsp tamari (or soy sauce)
What to Do:
Cook rice according to instructions. Set aside 1 cup of rice and let cool.
Place walnuts in a food processor and chop until coarsely ground (takes a few pulses).
Place walnuts into a skillet heated on low, and toast. Probably 3 minutes. Move them around and closely watch so they do not burn.
Turn heat off and add all spices. Transfer to a medium bowl.
Re-heat skillet on low and spray with avocado oil.
Dice onions and add to skillet.
Add minced garlic. Sauté for a few minutes until onions are translucent. Then, add to bowl of walnuts.
In food processor, add pinto beans, tomato paste, and tamari. Pulse a few times until combined.
Add bean mixture to walnut and onion bowl. Combine with a spoon.
Add cooled rice to bowl and combine.
Form patties with hands (should make about 6) and place on lined baking sheet.
Bake at 375 for 10 minutes.
Transfer patties to skillet (sprayed with avocado oil) and sear for a couple minutes on each side.
Top with your favorite condiments, avocado, and serve over a salad or sandwiched between buns! Potato salad is a great side for this dish too :)
