Brownie Bliss Bites

For all you double dutch chocolate fans out there, this one's for you!  I created these bliss bites because I had just made a batch of homemade almond milk, and I didn't want the nut pulp to go to waste.  You might be wondering exactly what nut pulp is...? Well, in order for your almond milk to be silky smooth, you need to strain it after blending your almonds and filtered water.  I like using my favorite Ellie's Best nut milk bag* as a strainer, and voilà! you get two goods for the price of one: almond milk and pulp!  There are so many things you can make with but pulp... I have a cracker recipe posted too.  But for a sweeter, more decadent option, try my Brownie Bliss Bites.  And you'll find the recipe so simple too because all you have to do is throw everything into a food processor!

Ingredients:

  • 1 1/4 cup almond pulp

  • 1/4 cup unsweetened coconut flakes*

  • 3 Tbsp pure organic maple syrup

  • 2 Tbsp cacao powder*

  • 2 heaping Tbsp coconut butter*

  • 2 heaping tsp raw almond butter (I love Trader Joe's Raw Almond Butter!)

  • 2 tsp vanilla extract

  • 1 tsp lucuma powder (optional)

  • 2 pinches pink salt

What to Do:

  • Combine all ingredients in a food processor

  • Roll into small balls... my batch made 12

  • Drizzle with almond butter

  • Eat one, then store rest in fridge in a sealed container!
