If you’re a lemon poppy seed loaf or muffin lover, you’re going to want to make these! I’ve also been told they have a cookie dough-esque quality to them. These ingredients are hard to top, and they are easy-peasy-lemon-squeezy ;) to make! Enjoy!!!
3 large pitted medjool dates
3/4 c gluten-free oats
1/3 cup raw walnuts
1 Tbsp chia seeds
1 Tbsp lemon zest
1 Tbsp fresh lemon juice (from a lemon, not bottle!)
1/2 tsp vanilla extract
1/4 tsp ground ginger
Optional: unsweetened shredded coconut
What to Do:
Place all ingredients (except coconut) into a food processor until fully combined, but not complete mush!
Using your hands or a small scoop, roll into small balls (I made ten).
Optional: roll each ball into a bowl of coconut shreds to garnish.
Place in a glass container and into freezer for at least an hour before eating.
I recommend storing in freezer.
