Low in sugar, but high in protein and fat makes the perfect snack! And my Nutty Coconut Bites are just that. Should I continue rhyming? OK, I'll spare you. These bites or "balls" are a great treat to have on hand when you need a little pick-me-up, and they make a yummy dessert paired with a cup of tea, which is my favorite time to eat them. They are intentionally mildly sweet to help curb sugar cravings. Grab 1 or 2 to satisfy that sweet tooth, and you will feel much better than if you reached for a processed treat. 1 cup pecans (I personally like to soak overnight, then dry since this helps with digestion)
1 cup almonds (also soaked and dried)
1 cup unsweetened coconut flakes*

4 medjool dates (pitted)
1 Tbsp + 1 tsp maple syrup
2 tsp lemon zest (about 1 lemon)
1 tsp of cinnamon
a pinch Himalayan pink salt
What to Do:
Blend all ingredients *really well* in a food processor until dough is formed.
Roll into balls (size can vary; usually makes about 15 balls for me).
Place bites in an airtight container (don't pile them on top of each other) and freeze for at least an hour or two before eating. Be sure to thaw for a few minutes before enjoying!
Store in freezer.
