Nutty Coconut Bites

Low in sugar, but high in protein and fat makes the perfect snack!  And my Nutty Coconut Bites are just that.  Should I continue rhyming?  OK, I'll spare you.  These bites or "balls" are a great treat to have on hand when you need a little pick-me-up, and they make a yummy dessert paired with a cup of tea, which is my favorite time to eat them. They are intentionally mildly sweet to help curb sugar cravings.  Grab 1 or 2 to satisfy that sweet tooth, and you will feel much better than if you reached for a processed treat. As you know, I aim to inspire a healthy lifestyle through whole foods, and there is no better way than through homemade creations. Keep it clean, and your body will thank you!

Ingredients:

  • 1 cup pecans (I personally like to soak overnight, then dry since this helps with digestion)

  • 1 cup almonds (also soaked and dried)

  • 1 cup unsweetened coconut flakes*

  • 4 medjool dates (pitted)

  • 1 Tbsp + 1 tsp maple syrup

  • 2 tsp lemon zest (about 1 lemon)

  • 1 tsp of cinnamon

  • a pinch Himalayan pink salt

What to Do:

  • Blend all ingredients *really well* in a food processor until dough is formed.

  • Roll into balls (size can vary; usually makes about 15 balls for me).

  • Place bites in an airtight container (don't pile them on top of each other) and freeze for at least an hour or two before eating. Be sure to thaw for a few minutes before enjoying!

  • Store in freezer.
